  • The nutrients in microgreens are more concentrated than fully grown red cabbage. For example, 1 cup of red cabbage microgreens has 3 times more folate than mature red cabbage.

    Red cabbage microgreens contain vitamins A, B6, C, E, and K1, as well as calcium, iron, magnesium, copper, manganese, zinc,  phosphorous and beta-carotene.  The highest concentrations being vitamin C.
